Chicken Breakfast Sausage Patties

Abby cannot eat any processed meats and the only meat she tolerates right now is chicken. We love breakfast foods around this house but Abby hasn't been able to eat any breakfast meats. When we made the gf english muffins a couple weeks ago, we both thought about an egg McMuffin. This patty works terrific with a fried egg and those homemade gf english muffins! Or, on the thai inspired waffles.. or on their own! Honestly, most bacon and sausage is just too fatty and salty for me and I couldn't be happier to add this to the menu for myself! Even Derek who is the king of bacon conceded this really was a tasty substitute that he too would be willing to eat instead of pork and processed breakfast meats.(though he reserved the right to eat bacon now and then!)

1 1/2 pound ground chicken breast
1/4 cup finely ground gf bread crumbs(ground chicken can be too wet to form into patties, the bread crumbs help"firm" it up to form)
1 teaspoons salt (or more, we try to reduce)
1 1/2 teaspoons freshly ground black pepper
2 teaspoons ground sage leaves
2 teaspoons ground thyme leaves
1/2 teaspoon ground rosemary leaves
1 tablespoon maple syrup(The real stuff, grade B stronger flavor)
1/2 teaspoon fresh grated nutmeg
1/2 teaspoon cayenne pepper(we added a bit more we like a kick)
1/2 teaspoon red pepper flakes
grapeseed oil for cooking.
Combine ingredients and chill for 1 hour. Form into 1-inch rounds. Refrigerate and use within 1 day or freeze for up to 3 months. For immediate use, saute patties over medium-low heat in a non-stick pan with a bit of grapeseed oil(chicken breast tends to stick). Saute until brown and cooked through, approximately 10 to 15 minutes.
