Train Wreck!

Things have been good for us this year with Abby. Apparently too good.

I had shared before the saga of the wisdom teeth(which she is keeping)

We have visited a number of dentists over the past 6 months. All of them instantly wanted to focus on the wisdom teeth. We knew she had some pit cavities and we had noticed significant changes to the color on her enamel, but when we would bring the subject up to the dentists it was always, "we can address that after we remove the wisdom teeth."

There are a ton of reasons not to have her wisdom teeth out. When she had the muscle biopsy and kidney biopsy and constant trips to the Dr. it was simply too hard on her body and we watched her get sicker, not better. After almost 2 years of intense work on Abby's part, we just "know" that wisdom teeth removal would set her back months...

So finally found a specialized dentist who referred us to another specialized dentist.. sounds familiar right?

Abby saw the new Dentist.


What we found out horrifies me. Her teeth are destroyed. Between last year and this year her teeth have simply started falling apart.


Of course my first thought was I am a terrible parent! Then I thought, what have missed in her diet? Then I thought fixing this is going to kill her... and admittedly I thought about the horror of having destroyed teeth. Let's face it, in America we all want those perfect teeth.. Religiously since she was 2 she had dental cleanings, braces, everything we were supposed to do.. Abby is one of those people who you may not notice until she smiles and she lights up, total transformation. Mega Watt smile. We have always worked very hard to keep the girls teeth in great condition. So you can imagine my horror.


The cost is mind blowing. The damage is mind blowing.

What caused it?

Acidity.

Abby always has a low PH, which means high acid. Now to find out why she has such a low PH. We were reassured that there is nothing absolutely nothing we could have done to have caused this.. not normal in a year, even if she ate batteries for breakfast, lunch and dinner. This is only seen in the significantly chronically ill population.

After googling, and chatting with a few families, apparently this has happened to other patients who have mito and other various diseases.

Learn from us. Make sure you keep the acidity low in the mouth.

You can actually buy test strips to test in your mouth quickly to check. There are supplements to reduce acidity. Leafy greens are great to help reduce it. What you use for toothpaste can make a difference. As we move forward with this dentist I am sure we will learn many new methods to slow further damage.

Make sure to drink plenty of water.

Make sure to find a terrific dentist. I am more then a little stunned by the lack of care by various dentists. To have so many not listen to our concerns and to fixate on the wisdom teeth(little money makers!) instead of being more concerned about not just her overall dental health but her overall health. How many times do we hear on the news that our teeth reflect our overall health? Yet so few Dentists practice what they preach. It is like Drs. on the commercials and talk shows talking about getting second opinions, nutrition, etc yet despite seeing hundreds very few practice what they preach are the best patient practices.

Make sure to have a saving account dedicated to dental care, right now we are looking at costs that exceed her medical care for the past 2 years.

Just like the journey so many of us have taken to more Drs. then we can count, dental care is no different. You really need to be an informed patient, you need to ask the tough questions and advocate for you or your child.

Gluten- Free Lefse(Potato tortilla/crepe)

I found after doing this recipe a couple times, it is hard to give you "exact" measurements. It will depend on the fats, and the moisture of the potato's. Despite my concerns about winging it, if you have made any other tortilla or pie crust gluten free before, this wasn't difficult.

These are AMAZING. Soft, they stay soft. Thin,flexible.. like a crepe because of the moisture, thinness, and flexiblity, but a tortilla because they were more sturdy and stretchy then any tortilla I have made. You could fill these with anything! Traditionally I think they are buttered and sprinkled with cinnamon and sugar. We ate them almost as quick as I could make them. That good.

I found that rolling these between parchment paper worked the best. One thing I have learned while learning to bake with gluten free flours is that it just seems to dry out and crack very fast. Keeping the dough as wet as possible usually works in my favor. Rolling between the parchment allowed me to use less flour and get the dough very thin.


3-5 idaho potatoes(aprox 2 1/2 cup mashed)
2 Tablespoons coconut oil room temperature(or shortening, or butter)
1/2 cup coconut yogurt(or coconut cream, or dairy cream, or sour cream, just higher fat)
1/2 teaspoon of salt, plus more to taste
1 cup all-purpose gluten free flour
(Parchment paper, and you should leave the gf flour out, I needed more for rolling)

Peel and boil your potatoes. Mash. Add the coconut oil,coconut yogurt, and salt. Blend till whipped nicely.
Transfer the potatoes to chill in the fridge overnight.(at least 4 hours)

Lefse are traditionally made with some funky specialty equipment, but a standard rolling pin and plenty of parchment paper will do the job.

Mix the mashed potatoes with 1/2 cup of the flour. Be Gentle! Fold and stir it gently. At first this will be very crumbly and floury, but will gradually start coming together. Add second 1/2 cup flour. This should give you a soft sticky dough, but one that holds together.

Making one at a time- I grabbed a golf ball amount of dough, and worked in enough flour to roll the dough into a ball.(you want moist,but not sticking to your hands)Place the ball of dough in the center of a piece of lightly floured parchment. Flatten slightly with hand and sprinkle a touch of flour on top. Place another piece of parchment paper on top so you are rolling the dough between the parchment sheets. I was able to roll mine very thin, nearly translucent.


Heat a flat pan(I used non-stick) over medium-high heat. When a bead of water sizzles when flicked on the pan, it's ready.

Roll dough thin, aim for making a circle, but mine had all sorts of odd shapes, still tasted amazing.

Carefully peel apart parchment, the dough should have either stuck to the top or the bottom(mine stuck to the top). Flip in your hand so the dough is facing up, to prevent gravity from peeling it off the parchment. Flip paper and dough over quickly into pan. Carefully to avoid burning gently pat the dough to the pan(move fast to avoid burns!).. After about a half a minute to minute, the parchment should peel off with care. I patted around the edges especially to make sure a section was ready to peel. Once you get it started gently pull, just watching to make sure you aren't ripping your Lefse. It always released for me, leaving it a little longer seemed to be key and making sure to pat the dough to the pan before trying to peel. Parchment paper won't melt or burn.

Cook for 1-2 minutes on each side until speckled with golden-brown spots. Transfer the cooked lefse to a plate and cover with another clean dish towel.


This makes a lot... you can cut the recipe in half. Or use leftover mashed potatoes. They seem to work best with mashed that have chilled. Use the flour as you need to be able to roll out. I find when working with gluten free flours less is more.

64 Countries in the World have either banned GMO's completely, or require very strict labeling.


Despite what Monsanto or our Government has claimed, there is research that Gmo's in our food(just gmo corn is in 8 out of 10 products from food to soap) could cause dire consequences. After finding Abby is allergic to the three most prevalent GMo's- Corn,soy and beets- I would be an idiot for not at least wondering what this junk is doing to our bodies.

We have absolute research that Roundup is toxic to mitochondria. They tweaked the corn, soy and beets(and other crops) so they can basically submerse these crops in roundup and the crops won't be killed. Guess what those plants are going to be absorbing out of the soil? Roundup. Unavoidable.





Marching and protests are "not" my thing ever. Now and then you must walk the talk however. But, what is my thing is knowing what is in my food, and the food I feed my family. I do not want to realize 5,10, 20 years from now as I sit at their bedside or lay in my own bed, dying from cancer or other disease, that simply avoiding GMO foods could have prevented a premature death, or a disease.



I am not known for tolerating the heat and humidity,(yikes 1 pm it is going to be a sauna)but I do plan to find a place to park so I can at least add to the congestion.

Maybe you have had an errand in the area of Houston that you have avoided? Today would be a great day to make the drive.

If you care about what your family is being fed with approval from your government, you should be there too!

Let us all work together to make America number 65 on the list to do the right thing and protect it's citizens!

Abby's Chicken Biryani


As with everything we make we did not follow a recipe. We have to remove a lot of ingredients or substitute. This is as close as we can get to Chicken Biryani for Abby. When we lived in Seattle we lived next door to an Indian/Pakistani family. They learned quickly that we enjoyed their food immensely and always shared when they made Biryani- my version is a far cry from the love, effort and ingredients they used but had just enough that we were quite pleased that it was close enough to remind us of their version.

Most Biryani recipes call for cilantro leaf,coriander seed, cinnamon,mint leaves and saffron. Abby reacts to cilantro(coriander is the seed of the cilantro plant)and cinnamon. Sara and Abby just aren't fans of mint. I don't have any saffron yet but am anxious to find some and try it with Abby.

So if you are a purist you aren't going to like my version. We did only marinade for 4 hours this round, I wanted to make it and was not in the mood to wait overnight. Hands down, it worth marinading overnight- the flavor is way better.

We have slowly been buying spices in whole form. A)they just taste better. B)It reduces the risk of cross contamination with allergens. I have heard many reports of reactions to various brands of ground spices.

Like most things I cook, I am giving "approximate" measures of the spices. I rarely measure out how much spice I use. Feel free to use more or less. I suspect I likely used more red pepper, and more turmeric then I posted.


Ingredients for the Chicken marinade: (make night before for best results)
4 chicken breasts(chicken on the bone is better, the flavors are richer, but Abby tolerates low fat best)
3/4 cup thick coconut yogurt
4 jalapeno green chillis, make a small slit in them or cut in half like I did.(you could use milder fresh chili's,we like the heat)
1 head garlic finely minced
1 Tablespoon finely minced fresh ginger(roughly an equal amount to the garlic.)
1 Tablespoon red chilli pwd (less if you fear heat)
1/2 teaspoon turmeric powder
1 teaspoon salt
1/2 teaspoon ground cloves
1/2 teaspoon allspice(cinnamon is better,but Abby is allergic)
3 black cardamom pods shelled and ground(or 1/4 teaspoon ground)
3/4 teaspoon black cumin seeds(grind)
3/4 teaspoon black pepper(to taste)

Place chicken in gallon sized ziplock bag- add all ingredients- mush and squeeze to blend and coat breasts seal bag. Place in fridge, best if allowed to marinade overnight, but a minimum of 4 hours.

1 large onion finely chopped and sauteed.

In the same pan you saute your onion,pour chicken and all the good marinade in the same pan with the sauteed onion. Cover and allow to cook for 30 on low heat.




Ingredients to cook rice:
3 cups Basmati rice(caution with rice, many brands coat with glucose or fortified,which with that is a high likelihood of corn contamination)
1/2 teaspoon ground cloves(whole would be better but only had ground)
3 (green)cardamom pods,
3 bay leaves
1 teaspoon freshly ground black mustard seed
1 star anise
1 Tablespoon oil
1 1/2 teaspoon salt
water as required

I make the rice in our rice cooker and follow the cooker's measurements- I simply threw all the spices in with the rice and water and allowed to cook. (before placing rice with chicken, I removed the star anise,cardamon pods,and bay leaves)

1/2 cup cooked lentils of your choice(I had some leftover in the fridge to throw in.)

3/4 cup luke warm coconut milk(I used 1/4 cup coconut yogurt with 1/2 cup warm water blended in)
1/4 teaspoon fresh cumin(your choice)
1/4 teaspoon ground red pepper

Mix these together and set aside.


Once the chicken, rice and lentils are all cooked you are ready to place in casserole.

In the bottom of a greased casserole place half the rice(with star anise,cardamon pods and bay leaf removed)and the lentils. Pour the chicken and marinade over the rice. Place rest of rice over the top of chicken. Now pour the coconut milk blend(water plus yogurt plus spices mixed and ready)over the whole thing. Cover and bake in oven at 325 for 30 minutes(or till bubbly around the edges and chicken is completely cooked)

Serve with dosa,naan, etc.


Quick Raita
peeled grated cumber(about 1/2 of one)squeezed or drained of excess juice.
1 cup plain coconut yogurt(or a 50/50 of plain yogurt and coconut sour cream)
squeeze of lemon juice
a dash of cumin powder
a dash of red pepper powder
fresh or dried parsley
salt, pepper

Dear Patients:

You have it very hard, much harder than most people understand. Having sat for 16 years listening to the stories, seeing the tiredness in your eyes, hearing you try to describe the indescribable, I have come to understand that I too can’t understand what your lives are like. How do you answer the question, “how do you feel?” when you’ve forgotten what “normal” feels like? How do you deal with all of the people who think you are exaggerating your pain, your emotions, your fatigue? How do you decide when to believe them or when to trust your own body? How do you cope with living a life that won’t let you forget about your frailty, your limits, your mortality?

I can’t imagine.

But I do bring something to the table that you may not know. I do have information that you can’t really understand because of your unique perspective, your battered world. There is something that you need to understand that, while it won’t undo your pain, make your fatigue go away, or lift your emotions, it will help you. It’s information without which you bring yourself more pain than you need suffer; it’s a truth that is a key to getting the help you need much easier than you have in the past. It may not seem important, but trust me, it is.

You scare doctors.



You really have to read the full post- it is great.

Abby's issues are neither black nor white. She doesn't fit on any graph,software program or how-to diagnostic medical book. There isn't any known pattern, though she does have her very own pattern. She doesn't respond to anything in any predictable way. You and I both fear her because of that alone. Outside the box, no users manual,she is in the gray zone, the unknown. I can relate to you for fearing her and disliking me, I am as annoying and upsetting to some of you as some of you are to me.

I am guilty of coming on strong like a freight train when it comes to Abby, Derek and Abby refer to it as the "Data Dump" that first appointment they get the whole dump.. I wish they did not need to hear it, I certainly get tired of trying to share 18 years of history in 10 minutes, but they NEED to know why Abby says no thanks when they write a script. Or why we insist on a certain compound pharmacy, or why we won't take her to a certain practice or field of medicine.. I usually try to warn them when we walk in..I have met only 1 Dr. who went through her stack of records line by line and did not pick and chose what they wanted to see. I have met a couple who skimmed it and admitted they skimmed and actually asked for the data dump- those Drs. are keepers.

It has become the official test now- if they willingly make an appointment for Abby again after the mighty data dump(if you see them scuttle toward the door with a hand on the door, or stand up suddenly during the data dump,they get a big fail!), or acknowledge that this has to be a three way team work to care for Abby, that they are willing to accept every single order must be able to make it past Abby's and my lists of a 100 things to watch for before even looking at a food, water let alone medicine.. We know they are the type of Dr she needs.

No Dr. understands Abby. Heck I work 24/7 to keep her afloat and there is so much I don't understand.. all I ask is that they acknowledge that Abby presents a unique situation that may take a little out of the box thinking. That she has been through the ringer with diagnostics and isn't going to do any more to prove what we already know so they can see the same lab results on their letterhead..

We don't expect you to know what is really wrong with Abby, we are so past that.. What we do want is access to your brain and that load of terrific experience and knowledge. You know chemistry, I don't. You know know biology, I don't. All I know is Abby. Take a minute and listen. Take a minute and translate Mom talk to a language you understand.

You cannot fix her, and we have walked away from many appointments with no prescriptions- and been thrilled. We need to brainstorm. We need to hear that what we are doing makes sense at a science level. I need to know what will happen if I cannot find enough B12 for Abby, what symptoms may or may not be nutrition or something else. Abby and I find ourselves usually finding our solutions for her, but I am not a Dr., tell me when I may harm her,or what to change to prevent further damage, but don't assume your way is better-ever.

You are being graded by Abby and I. You get an A if you both listen and acknowledge something is very wrong. You get an A even if you don't have the answers, even if you don't have a referral to someone who might know,you get an A if we walk out without a script, you get an A for being human above all else.

I know you want to fix her. I know you don't want to tell me there isn't anything you can fix. You feel exactly the way I often do..

I think we have more in common then you think- I am often scared of Abby's health issues too.

Fast Urad Dosa/Eggless Crepes( egg free,soy- free, corn-free, dairy-free, gluten-free)



So I roughly followed the Dosa recipe, just did it in a hurry with a few shortcuts.. so if it is the process that makes a dosa, then not a dosa.. call it a crepe like Dosa?


I have never tasted these before so I have no idea if they are as they are supposed to be. I know right out of the pan they are so soft, tender, and though delicate definitely have more flex then a crepe. As they cool they are more likely to break, but continue to stay very moist like a crepe. We finally tried fenugreek with this recipe, and I hesitate to say whether we like it or not.. jury is still out. We did all decide to skip the fenugreek with the next batch and that should help us decide if we like the fenugreek or not!

This would be fab recipe for vegans- you get all the qualities of the crepe, minus the eggs- cannot beat that! I would recommend sweetening the batter for dessert uses, and adding favored herbs for savory.

My first issue was I don't have a grain grinder- based on the pictures I saw of the preferred machines not many in America own the ones of preferred use. My second issue was that they allow the completed batter to ferment overnight without yeast. Basically think sourdough starter. I had made some injera bread a few months ago and found I could shortcut the fermentation process by adding a bit of yeast. So instead of waiting overnight(and hoping!)It just took a couple hours.


1 1/2 cup basmati rice(or other rice, when in doubt, blend two different rices)
1/2 cup urad split and hulled

salt

fenugreek(added 1/3 teaspoon ground- powerful stuff!)

grapeseed oil(or oil of choice, coconut would work great.)

1/2 packet active yeast (1 teaspoon should do fine, though you could probably throw the whole packet in and be fine too)


1) Place rice in one bowl and cover with water. In another bowl place urad and cover with water. (be generous, the urad will swell some) allow to soak a minimum of 5 hours, but overnight is fine.(urad is fine after 3 hours, but the rice needed longer soaking, the only thing I had to grind it with was the Ninja and though they turned out fine after 5 hours and cooked smooth, when I blended the rice it was clearly not as smooth as recommended. I wonder if the end product would be even better? Certainly will not hurt.)

2) In morning, drain rice and set aside. Drain urad, but save the water! You will need it.

3) place Urad(always recommends grinding separate and do urad first)in Ninja add enough of the urad water you saved to allow the Ninja to blend with some ease. This took a few minutes(scraped down once or twice). The final batter is fluffy and thick. Scrape the batter into a large bowl. No need to rinse the ninja.

4) Place rice in Ninja-add the saved urad water(just enough again to allow the Ninja to perform well). This took a little longer, though if I had soaked overnight it would have gone faster. I scraped down a couple times. Now pour rice puree into the same large bowl with the urad puree. Add aprox 1/2 teaspoon salt(I ended up using a full teaspoon), 1/3 teaspoon fenugreek(all the recipes call for it, but I am sure it works without and next we are skipping it.)and lastly the yeast. Mix well.

Cover and place in warm place(think yeast bread.) Mine doubled in size in about 3 hours(placed under the humid Texas sun). If your batter is thicker then pancake batter, add more water. My batter was about a thin pancake batter after I added about 1/4 cup more water, but, this will depend on how much water you added when you were pureeing your lentils and rice earlier.

5) I used a large flat non-stick pan. I very lightly greased. I would pour a laddle full of batter in the center. As it started to cook I would push the batter in circular motion out from the center. I found that you are trying to spread it to stop it from bubbling and getting holes. My best temperature was a tad higher then medium.. too hot it cooked to fast to spread. Too low and then tended to stick.
As the top dried I drizzled a bit of oil around the edges(I rolled the pan to get the oil to run around the dosa.)Then I flipped it for a minute or two.

6) My directions are not the best, but if you search "Urad Dosa" you will find a lot of great tutorials.

7) We ended up eating these rolled with chicken salad and lettuce and they were perfect.

8) Most recipes strongly encouraged restraint in the oil use. I found my pan needed a bit more then they recommended- regardless, we are very pleased with how these worked out for us.

Chai Tea Urad Waffles! Grain -free! Gluten-free! Egg -free! dairy- free! Soy -Free! Corn -free! Nut and Seed -free-





Easy- magical and amazing.


Who would think you could make a waffle with a nice flour like texture from just lentils,water and a bit of oil??.

These are heavier and chewier but if you are avoiding grains, these are really remarkable. Honestly, I have made regular waffles that did not turn out this tasty! We like them both sweet and savory. We have toasted these the next morning and again, better then we thought possible.

I did try to do this with both chickpea's and black eyed peas- they really did not work. I finally added some egg to the chickpeas and peas and it did finally hold together but they were sooooo dry and frail- not worth it- stick to the Urad!

I might try pancakes next.. or fritters, or donuts? Sky is the limit and I can see these becoming essential in my kitchen. In India urad is incredibly popular- yet, again in America we have some how overlooked this magical lentil/bean. Like Yuca, tamarind, jackfruit these flavors are all very appealing to Western taste buds- yet we don't eat them? Why is it we are the melting pot but some how are missing out on some of the best foods? Not any more we eat them now!



Soak 1 cup split and hulled Urad in water(covered by water) for 4-5 hours or overnight.


In high speed blended:

The soaked and drained Urad
2 tablespoons oil of choice(I used grapeseed)
2 tablespoons of water(or more or less, but only enough for your blender to be able to blend the lentils to a smooth almost gluey batter without struggling.

To make Chai Tea flavored add the following to the blended Urad;

1 green cardamon(shell removed and ground in either coffee grinder or single serve Ninja cup blender)
1 teaspoon ginger
1/2 teaspoon nutmeg
1/4 teaspoon cloves

1/2 cup granulated sugar
dash of salt.


Blend well, I had to scrape down at first but once it got going and I had added the water it blended up nicely. You want a smooth gluey batter that is still spreadable but thick.


I heated my waffle iron. I oiled it super super well(these WILL stick!). I used a spatula and spread the batter across the iron(keep in mind these do not rise so add enough to cover griddle well.).

I cooked until most of the steaming stopped. I checked it when the light indicated it was ready, but it needed longer cooking.

Serve with syrup,sauce, or ice cream?


SAVORY: any blend of herbs you like. Skip the sugar and increase salt to 1/2 teaspoon.

SWEET: You can add any flavoring of your choice. Minus the strong spices I used, I would probably reduce the sugar,but fresh cardamon and the other spices balanced better with more sugar. I would think honey would work as well, though I would add the honey in place of the water when you initially blend the lentils.

The only two tips- don't use too much liquid- you want it thick but spreadable- so add just enough to get to puree without damage to your blender. Oil the waffle maker- even with a lot of oil mine still wanted to stick, so I had to gently pry them out- they held together but you will still need a bit of patience. Make sure to re oil with each new batch.

Chickpea Butter Cookies, Better then Peanut Butter!



Gluten free, dairy free, corn free, soy free, nut and seed free


A few months back I created "Nofu butter" for Abby using coconut cream, chickpea tofu, brown sugar, grapeseed oil and salt. We tried a few times to make cookies but the flavor was completely lost when baked. A tasty cookie, but far from nutty.


The other day we actually had a surplus of roasted chickpeas(I have seen these in a few stores now in the snack section)and Abby asked if I could grind them like roasted peanuts- so we tried. We did add a bit of grapeseed oil,dark brown sugar and salt, and it was a bit more doughy then creamy- but the flavor was really terrific it had a far more intense nutty flavor. I thought about adding more oil, but since Abby is limited on how much fat she tolerates we were happy with this and it spread so we figured good enough.

Today I was digging through the fridge and spotted a jar of the roasted chickpea butter and decided I should try chickpea butter cookies again.

These turned out delicious and definitely had more flavor the ones we made with Nofu butter. Not quite as nutty as we had hoped for, but the texture was perfect and it clearly tasted like a peanut butter cookie,just a little more mild- how can you not like that? The house smelled like freshly baked peanut butter cookies and we know these are safe for Abby.

preheat to 375 degrees

1/2 cup granulated sugar
1/2 cup packed brown sugar(domino's)
1/2 cup roasted chickpea butter,(or seed or nut butter of your choice.)
1/2 cup Spectrum palm shortening
1 egg
1 3/4 cup gf flour(see note below)
3/4 teaspoon baking soda
1/2 teaspoon baking powder(hains)
1/4 teaspoon salt(we use pink himalayan)
METHOD
1 Beat the shortening,chickpea butter,sugars, beat for 2 minutes. Mix in the egg. Mix together the dry ingredients - gf flour, baking soda, baking powder and salt. Stir the dry ingredients into the sugar and shortening mixture till well blended.


2 Preheat oven to 375°F. Shape dough into 1 1/2 inch balls roll in granulated sugar. Place about 3 inches apart on ungreased cookie sheet. Flatten in crisscross pattern with a fork. Bake until light brown, 9 to 10 minutes. Cool on baking sheets for a minute; transfer to rack to cool completely.

Note: Make the dough into balls, roll in sugar and freeze separated on cookie sheet. Once frozen place altogether in bag to make a few at a time.

NOTE: For a flatter and chewier cookie reduce flour to 1 1/4 cup.

Spicy Yuca Salad(dairy free, egg free, corn-free, potato-free, nut-free, soy-free)



There seem to be endless ways we are now finding to cook Yuca. We do try to add it to Abby's diet at least 1 time week if not more- it is a natural anti- inflammatory.

This reminds us of german potato salad- but way better!


1 yuca, peeled, sliced(or chunks like potato salad size)and boiled

5-6 cloves of garlic(the more the merrier!)

1 red onion(or yellow, or white, we liked the color added with the red)

1-2 jalapeno's- (fresh from the garden, make sure to remove the seeds if you are worried about too much heat)

Grapeseed oil or Olive Oil(if you have found some that is safe for you)

1/2 teaspoon salt and pepper(to taste really)
1/2 teaspoon cumin
1/2 teaspoon ground red pepper(to taste)

2 tablespoons Braggs apple cider vinegar

fresh parsley or cilantro(allergic so we stick to parsley)

Cook the yucca and drain and set aside.

Saute the onions,garlic, jalapeno with grapeseed oil(be generous with the oil,)

Once onions and jalapeno are soft add yuca(keep on heat, we like this served warm). Stir. Add vinegar and seasoning. cut in parsley.

Finally, add a generous dash of grapeseed or olive oil till moist.

We really like this hot, but we enjoyed it chilled as well. The vinegar seems to really transform the yuca.

If it is Secondary-What is Your Primary???

Two different onsets of Mito- Primary and Secondary.


Secondary medical conditions occur when there is a Primary disease that causes the Secondary.


So with Primary Mito the seizures are secondary because the patient has seizures because of the Mito.

So with Secondary Mito the Primary could be taking a medication(a few other known causes and I suspect that list is about to get longer) that caused the Mito.


I suspect when the dust settles and the Researchers put all the pieces together there will as many if not more cases of Secondary then Primary Mito- Which means there is a whole lot a hope for for a whole bunch of Mito Patients- just my theory.

A great book to read- Minding My Mitochondria 2nd Edition: How I overcame secondary progressive multiple sclerosis (MS) and got out of my wheelchair.

Fact is there are more American's on disability then ever before. Our children are being destroyed by Autism,Mito,ADD, ADHD.. I saw a news clip the other day stating that 1 in 5 children are suffering mental illness.

There MUST be PRIMARY issues causing many of these health issues, that or we took a very wrong turn on the evolutionary model.

Nutrition,medications,vaccines,round up, pollution, Air conditioning, lack of exercise, lack of sun exposure, GMO's.. and a zillion other potential influences that are relatively new to humans in the past 60-100 years that "could" be the primary cause of triggering a secondary condition.

As a society we think progress includes making foods grow immune to nature, packaging instant foods that can last on a shelf for years with the right blend of chemicals, a bunch of viruses injected into our bodies to change our immune status to avoiding catching these diseases...we even depend on fake artificially made vitamins instead of eating the real ones..Despite all American Moms being well aware that breast feeding is the BEST for the 1st YEAR, more children are still being given artificially created foods after 6 weeks then getting the real McCoy from Mom. The question is, what are the long term outcomes of all these insults we are dosing our bodies with- is the price 1 in 5 American children will be mentally ill? That 1 in 80 suffer from autism? That it is becoming shocking normal to feed a toddler through a tube because for some reason they cannot or will not eat? FPIES,EoE, and simple refusal, then the GI issues that are secondary to primary mito and secondary to Secondary Mito(which could be due to an unknown primary) 50 years ago we did not see toddlers wandering around with liquid food packing on their backs, patients with holes in their bellies to feed them- believe me, if there were patients getting those treatments we would have known. So why so many now?

Why are 1 in 5 children now suffering mental illness? That means when you go out to eat with 5 friends, at least one of your children is mentally ill. Doesn't that freak you out???

I don't know what the "primary" issue is for Abby. I am desperately hoping we can blame the crazy allergies- actually treating the allergies has been the only thing that has not only stabilized her, but allowed her to slowly get better. They released a study recently that shows being born in America ups your odds of having significant allergies.. that after just living for 10 years you are at a higher risk to develop allergies- Why? Allergies doesn't explain Abby's myopathy or poor fetal movement- that is genetic,but what caused that genetic twist? It certainly is not normal. Maybe all the fluoride is to blame.Or maybe those synthetic prenatal vitamins every single Mom in America takes to ensure the health of their babies?(why then are so many sick?). or artificial colors, or did you know exactly how many toxic chemicals go into making a mattress? Rolling around in toxins all night for years- could that have been a small but definitive contributing issue?

I don't know. I don't think anyone knows. But for once I am grateful the girls are not likely to have their own children. If they did odds are even if my girls were perfectly healthy, the odds say their kids would be sick.

We are unfortunately on target for the first time in many many generations of Americans to see the average length of life decline with this generation- Is that what it will take for our Government to acknowledge that something, or many things are making American's sick?


So if you don't have a gene mutation for Mito, maybe your Mito is secondary too. Do you know what your Primary is?

Gluten Free Peach Upside Down Cake(dairy free,corn free, nut free,seed free )



Peach Cake

2-3 large peaches, pitted and sliced into approx 1/2″ pieces(I used a pack of organic white peaches from the freezer)
1/2 teaspoon ground nutmeg
1/2 teaspoon ground mace
1/4 teaspoon ground ginger
1/2 to 3/4 cup light brown sugar(my peaches were very sweet so just used 1/2) (domino's brand)

5 tablespoons grapeseed oil(TJ's is reasonably corn safe- I have been using the HEB)
3/4 cups granulated sugar(dominos)
2 large eggs, at room temperature
1/3 cup coconut yogurt(or coconut sour cream we make both homemade )
1/2 teaspoon pure vanilla extract(homemade)
1 cup plus 2 tablespoons all-purpose gluten free flour(your choice on whether to add 1/2 teaspoon guar gum)
1/2 teaspoon baking powder(Hains)
1/4 teaspoon salt(been using pink himalayan)
Preheat the oven to 350 degrees F. Generously grease a 9-inch glass pie dish and arrange the peaches in the dish.

Combine brown sugar and nutmeg,mace,and ginger. Sprinkle 1-2 tablespoons of flour lightly over peaches(skip if the peaches aren't juicy or reduce amount,worst case if you skip it, the center bottom may be a bit gooey as you can see in my picture! FYI, that soft center set up beautifully when chilled.) Pour sugar and spice evenly over the peaches.

Sift together the flour, baking powder,salt,sugar. Add,eggs,yogurt,oil, Mix only until combined.
Pour(spread,depending on how thick or thin your yogurt or sour cream is may make the batter thin or thick-fine either way) the cake batter over the peaches and bake for 35-40 minutes, until a toothpick comes out clean.(Had I checked mine with a toothpick, I would have put it back in for a few more!)
Cool for 15 minutes,(I used a knife and ran around the edge of the pan to loosen before flipping) then invert the cake onto a flat plate.

NOTE: Always use ingredients safe for your allergies. You could sub a safe sour cream or yogurt of your choice for the coconut one's we use. I am betting you could use coconut oil instead of grapeseed oil.

23andMe and DIY Genetics

NOTE: 23andMe, Genetic Genie, and Promethease are not meant to replace the care of a Medical Dr. I strongly recommend discussing any genetic results with your Dr. Genetics is a field growing by the day, and it is a complex field that a Dr. Specializing in Genetics is best to consult with.. Results from these tests are only results they do not mean you have a disease or will get a disease.- Some states like NY and Maryland have gone as far as to restrict their citizens from being able to independently order these type of genetic tests. For some, the results may be alarming despite understanding that only your Dr. can make a final determination on what you should be worried about. There are fun things like what type of tastebuds you have, or your eye color(which was wrong on Abby's by the way)but all findings on genetic test are NOT valid until reviewed by a Medical Dr. with training in the field of genetics.



Took 6 weeks but the health results are back.

As expected nothing we did not already know in the health summary.

It was well worth it though, and here is why.

When 23andMe runs their software it only picks up on a very limited field of variants for a few diseases/characteristics. That raw data however can be downloaded.

What do you do with 10,000+SNP's ? You turn around and upload them free(donations welcome)at Genetic Genie. Their software focuses on Methylation.

By now you have likely heard the word Methylation. I still don't understand it completely, but what it offered us was some insight in how Abby's body processes. She has some issues in various pathways and via nutrition(many supplement) you can help overcome the issues that come from the problem. Not sure you can elimination the problem, but they are treatable. It gave us insight into what we have done right this past couple years focusing on various nutritional elements, and what we can still improve.


Here is an example of the info from Genetic Gene:

Addressing ACAT and SHMT SNPs
ACAT1-02 (acetyl coenzyme A acetyltransferase) plays a role lipid metabolism and energy generation. It can also deplete B12. As with CBS, Dr. Yasko views this as a first priority mutation. Going by Yasko's clinical experience, she says to address them first if you have elevated iron on a UEE, elevated iron on a UEE test, Short Chain Fatty Acid (SCFA) imbalances on a CSA test, suberic acid, beta hydroxyl methylglutaric acid, or other ketone and fatty acid metabolites imbalances on a MAP or OAT test; or if there are severe gut issues or muscle weakness (which can be related to aluminum retention)". She says people with ACAT or SHMT are more likely to experience gut dysbiosis. Because of disrupted flora, microbes may have an affinity for and retain toxic metals. Stabilizing the gut environment is very important.

Some of you are probably thinking- not for me, I get that not everyone believes medicine should start with food. Honestly I think really good medicine is a combination of environmental/nutritional and the more traditional Medicine.

So, I suggest taking your raw data to Promethease. This program will cost you 5 dollars- that is it. The amount of genetic data it provides is shocking for that 5 dollars. The software to search and review your findings probably is a little overwhelming but you get the hang of it quickly. Based on hours of digging yesterday, much of the accessible genetic studies are going to be on the "most common" diseases like cancer,diabetes,heart disease. However, lots of other neat things too!

From certain SNP's found in collagen disorders to whether you have the mutation that makes cilantro taste like soap, the amount of data is truly impressive.

fully heterozygous, age related tasting variation You are heterozygous at all 3 of the SNPs which are known to influence the ability to taste bitterness. This means you are better than average at detecting bitter tastes while young, but that this ability will decrease to less than average during adulthood. As a child you will probably hate brussel sprouts, and by early adulthood will discover that olives and brussel sprouts now taste good. A 2010 study shows the change bitter sensitivity which occurs over the lifespan (from bitter sensitive to less so) is more common in people with this genoset. Children with this genotype could perceive a bitter taste at lower PROP concentrations than could heterozygous adults. The threshold for adolescents was intermediate. The 3 SNPs are rs10246939, rs1726866, rs713598 in the gene TAS2R38


A trivial finding for example, but a fun one.. despite the massive amount of data to mine provided by Promethease, it really is fun to comb through. I haven't even looked at much ancestral data from 23andme yet, that is for another day.


Have I learned anything to help diagnose Abby? Not sure.
Have I learned more to help Abby? Yes.

How much did it cost between the three programs(23andme,genetic genie,Promethease) a grand total of 105.00

Did you find anything scary? No, you MUST remember that genetics aren't absolute. Simply indicating risk can be helpful to encourage better life habits. Or knowing a higher risk of cancer might make you better about booking your physical each year- it doesn't mean you are going to get cancer, or heart disease.. If you can remember that as you sort and dredge data then none of it is scary.

Blog Reading.

One of the first things I did when the discussion even came up about a potential Mito diagnosis was start reading Mito Blogs.


First thing I noticed was that Abby wasn't the same as most mito patients who blogged or whose families blogged about them.

Then I figured that since Abby would be considered more "mild" perhaps those who were more mild just didn't blog.

Since then I have found a lot of mild patients, some like Abby who "fade" and lots of acute patients who seem to suddenly crash and need life saving efforts at the hospital. There are children that look like the picture of health, attend school full time, live crazy hectic lives with playing, school, birthday parties, appts and crash- Abby certainly is nothing like those patients not even at her healthiest, poor kid never could keep up with the other kids..there are many patients with seizures or who have more neurological damage- Abby thank goodness has neither, she has been fortunate that despite a funky body, her brain has been untouched.


From the very beginning of this particular part of Abby's journey, I have doubted the Mito diagnosis. I still do.

Most days I read blogs of children with depletions not making it past a couple years. Of teens with depletions who are so terribly sick and in and out of the hospital.. a few adults who have a depletion from medications or suddenly got ill out of the blue and rapidly got worse-

None of those are Abby.


Most days I spend trying to find out what is "really" wrong with Abby. I am a huge believer in trusting the "Mom Gut" and my Mom gut says Not Mito.. or at least "something else" caused the depletion...

Most days when I read the stories of what these families are faced with, the loss of their children, the horrific decline and illnesses- though my heart weeps for them, my Mom gut screams "See, Not What Abby has.."

Frankly I feel a little guilty that in a moment of sharing their grief these families unknowingly also offer me hope. Talk about feeling pretty rotten.. but, I cannot help myself.. it reaffirms my instincts that we are missing something with Abby.

There are days however when I look at Abby and I see Abby and compare her to a "normal" person. Reality is she is far from healthy- and she is truly an orchid, one tiny insult to her body and all this hard earned progress slips away.. that is not healthy, but the question remains, is it really Mito?

Every once in awhile when I read what families or patients share about their symptoms, I am forced to admit that Abby has the same thing. The endless need for sleep, to hideous weeks of insomnia. Getting a cold or other bug and watching her body react like she has Mono not just a head cold.. These symptoms seem pretty universal. Hard to run from them.

There are those Mito families that also struggle with serious funky allergies, allergies to things that it seems impossible to be allergic to, allergies that rise and fall and develop and disappear suddenly, we can relate to that too.


I now read blogs about families with Mast, SMA3, EDS, and you know what? We can find similarities with them as well.

Sick is sick- it is the Universal great equalizer.

Today was one of those days where reading blog updates reminded me what Abby has in common, and what she doesn't.

We feel very lucky today. I still doubt this "mito" junk, I wonder all the time about how accurate that second muscle biopsy was, I wonder why her metabolic work is always fine, I wonder why and where the heck that depletion came from..

She is getting better, she may never be healthy, but I think all of the things we have learned about Abby this past two years have taught us that there are no absolutes, well only 2- you gotta pay taxes and everyone dies- but those absolutes are Universal too.

So while I cannot simply wish away a depletion, I can say that Abby isn't like the other patients with depletions, her biopsy results were different, her symptoms are different, no genetic proof yet, no sign of Mito in her labs.. that depletion is simply a symptom-

Secondary. That is what my "Mom Gut" says, and I trust it.

Now that she is stable and improving, the journey continues- find the Primary.

Easy Asian Inspired Teff Fritter



You could use rice or millet or quinoa for this dish. It can also be seasoned to become a Mexican side (chili's,peppers,seasonings). We like this to go with Pho or for a lighter dinner and Abby said she would gladly eat it for breakfast.



Teff grain(cooked, 1 cup teff grain and 3 cups water-bring water to boil,add teff, reduce heat to low,cover and cook for 20-30minute till like porridge)

1 onion
2 carrots
1/2 cup peas
fresh garlic
fresh ginger
Coconut Secret's Amino's(non-soy soy sauce)
salt
pepper.
4 eggs well beaten


Sauteed finely diced onion,finely diced carrot, finely minced ginger and garlic till translucent.

Add sauteed veggies to to cooked Teff grains. Add Amino's(I used about 3 teaspoons),salt,pepper and beaten eggs and mix together well.

I poured into a large lighted greased pan. Set burner to low. Cover for about 30 minutes.

Serve with sliced onions, coconut amino's, and maybe a cup of Pho?

I topped mine with a few of the chia sprouts I started earlier this week.

Those are either the items she has repeatedly skin or blood tested positive for over the years, or ones that cause her kidney's to dump proteins,cause GI issues from dumping to constipation to pancreas pain to vomiting. Skin rashes and edema occur with many too. NSAIDS cause respiratory distress as does airborne corn(popcorn, a bag of corn chips being opened, flipping through a magazine). Sesame seeds also cause immediate respiratory reactions. Beets,Safflower destroyed her kidneys and Hemp was another respiratory immediate reaction. Course the PEG(miralax) I have written about a couple times. Some of these cause reactions within in minutes,some are delayed reactions.


Trees(especially cedar,birch(newish),pine,)
weeds(many including ragweed)
dust
fur and feather(birds,rodents,cats(very bad)horses(very bad),dogs(though we insist on keeping the poodles)
wool and lanolin(for as much as I would like to try her with lamb(highb12)kind figure she will not tolerate it.)
Mold.

Then the long list of foods know to cause histamine issues. Which the list is too long to put here, but includes spinach, strawberries..and many others. We hope to re introduce some of these foods and figure which trigger her or not this year.

Then the fermented food issues from the histamine issues- like kraut and alcohol(though she is doing great with cultured homemade coconut yogurt.)


Then all the weird fragrances, air fresheners,windex(just windex),sizings,formaldehyde etc.

Then anything artificial like colors,preservatives,"artifical flavoring. With the artificial stuff it is hard to say whether it is an issue with the chemicals or the corn or soy they are often derived from, but regardless she reacts and those usually spike her proteinuria.

So, just hidden corn wipes out about 8 out of 10 items in the grocery store. Add histamine reactions and 9 out of 10 items are off limits. Add all the other reactions like birch, safflower,colors, flavorings, fermenting- she simply cannot have anything packaged.


Even deodorant, toothpaste now has to be made at home with very specific ingredients.

Things like coconut oil- what is on the shelf that says "100 percent" coconut oil doesn't mean it hasn't encountered corn,soy or any number of her other allergy items while being processed and packaged. TT, Nutiva and few others have been safe but we have had a few she has reacted to from cross contamination.

Every single item down to what salt we use, what baking soda we use, what paper towels and toilet paper we use must be carefully selected based on her reactions.


A few of the allergies we dealt with when she was little- corn,soy,tomato,dairy, and a couple others. But, this round with her health, her list is growing by the day it seems.


Despite the length of her lists she still has plenty to eat, granted to find good nutrition we have definitely expanded what we eat but that part of the allergies has been fun. So many foods I have never bought or some I have never tasted. Abby has been a great sport too about trying some funky food! Admittedly, my girls have always been great about trying new foods at least compared to my friends children, but really I don't see Abby asking for chickpea Nofu when she was 4!!! :-)

Hoping that like when she was little, she will slowly outgrow some of these intolerances,reactions,cross reactions, minor contaminations and true allergies. We can hope!

Mother's Day? It Should be "Children's Day"

I cringe at the Mother's Day mentality.

I do not want nor need a thank you. Why thank someone you have given a gift to?

I do not want to run away from my family, my children, my husband, I want to have them beside me for me to enjoy.

I do not want to be treated like some god, princess, queen- that is not a real Mother.


In fact, it should be "Children's Day."


The best thing that ever happened to me or my husband were our daughters.

Through every breath, through every milestone, they give us a reason to live,learn and grow.

It is my gratitude not theirs that needs celebration this day every year.


My Mothering is No gift, it is the very reason I live. Being a Mom, a good Mom is self satisfying it is a way of life,destiny, pure joy to be to a Mother- Children are the gift to us, Mothering is a privilege.


I thank you my daughters for allowing me to grow, to thrive, to learn, to live by mothering you. What an amazing life you have given me.

Today I will cook something special for them not me, today I will hug them extra tenderly in gratitude for their very existence through them I live a full and gifted life.

Today as I wipe away a ring of tea from the counter, start a chicken cooking, tidy the corner of their sheets on their beds,
I am living the Dream.

Yuca(cassava) Gingerbread Loaf(gluten-free,corn-free,grain-free,egg-free,dairy-free,seed-free, soy-free)



This is about as healthy as a dessert will ever get that I post on my blog. At least it was until I could not resist the urge to pour some lemon glaze over the top! If you noticed in the pictures it looks sooo moist, so moist you might think it is raw, but it isn't. That is the beauty of yuca cake, it is near impossible to ever make one that is dry.

A few months ago I had a yuca/coconut carrot cake that we really enjoyed. I had some yuca that I needed to use and I thought about the carrot cake except I also knew it was time to add some blackstrap molasses to something on the menu. So Gingerbread it what we decided. Since it already seemed unusually healthy for us, we figured we would roll with it. We also opted to use palm sugar instead of cane. Raw Palm sugar(there is a difference between palm and coconut, though often coconut will be labeled palm, you really want a pure raw palm sugar)is loaded with more then empty calories- active enzymes, tons of minerals- and reminds us of sweet brown sugar. I buy it in the block and have found grating it works great vs trying to chisel and crush.


You want to grate your yuca very very fine, or buy it finely grated frozen(many hispanic and asian stores carry it frozen with a corn allergy it is alway safest to grate it yourself to avoid potential cross contamination risk). Sometimes when I grate fresh the yuca seems very very wet- I have put the grated in a clean dish towel and squeezed out the excess fluid.

Preheat oven 350

2 cups finely grated raw yuca
1 cup finely grated coconut(I used fresh frozen,it was a coarse grated, a fine grated would have blended better,but this added texture with the longans so worked well)
1 cup palm sugar(raw)
1/4 c stewed longans(or raisins or you could dice figs or dates)
2 Tablespoons blackstrap molasses(MUST be blackstrap un sulfured if you want all the great minerals)
2 Tablespoons coconut oil( softened at least to help blend it.)
3 teaspoons of ground ginger(we like a lot of ginger,feel free to use more or less)
2 teaspoons allspice(we cannot use cinnamon so allspice subs nicely)
1/2 teaspoon nutmeg
1/4 teaspoon ground cloves
dash of salt.(Pink himalayan, great source of minerals)
1/4 cup boiling water.


Mix everything in a bowl except the boiling water. After everything is well mixed, mix in the boil water.(this gets the starches releasing from the yuca.)

Pour into well greased loaf pan. Bake for 75 minutes(yes, I said 75 minutes) on 350

allow to cool. We felt this was better the next, which is often the case when baking something using molasses and heavy spices- seems like allowing it to sit overnight allows the flavors to meld nicely.

GLAZE: juice of one fresh lemon + aprox 1 cup to 1 1/2 cup corn-free powdered sugar. Pour across the top.

NOTE: Yuca tastes horrible raw! The flavor changes completely once completely cooked. It is important to bake this completely for that very reason.

Chickpea Milk..



Knowing our passion for anything chickpea, it was only a matter of time before I "had" to make chickpea milk.

One positive/negative - very low fat. Which means when I make yogurt with it(and you know I will!) I am going to have to decide whether to add some coconut cream to help create a better product.

Here's what I did:

Soak your chickpea's overnight.

Cook your chickpea's(90 minutes in my electric pressure cooker)

Strain and rinse.(they should be mushy)

Place in Ninja(or other high speed blender) and add a few cups of clean water.

You want a thin paste so add water till you get an almost cream like thickness.


Pour into pot and cook for about 15 minutes. IT may thicken a touch, but just add a bit of water to keep it a "milk like thickness"(I found it much thinner after straining)

(Not sure why all the "recipes" online recommend cooking it "twice". But, since they consistently made the recommendation I did as well)

Improve the nutritional quality of a meal containing beans by consuming them with cereal grains. Beans are a rich source of lysine (an amino acid), which is low in cereal grains. On the other hand, cereal grains are high in methionine and other important amino acids (building blocks that make up a complete protein). Together, beans and grains, or grain-based foods such as rice, tortillas and pasta, complement each other to provide a complete protein.

Alternatively, dust of that soy milk maker you put away when you realized that GM Soy was horrific for you- it will make chickpea milk too!

I could not resist and have my first batch of "chickpea yogurt culturing" will let ya know how that works, more importantly, how that "tastes!".

The more I read the more I wish I had known before we were bullied into vaccinations- more and more evidence that not only are vaccines dangerous, they do not provide you the protection you were promised. Currently there are cases being settled in Vaccine court that find the vaccines caused the Mitochondrial disease- there are hundreds of cases being settled where children and adults have suffered horrible and life altering "side effects"- can you imagine finding out that a vaccine caused Mito in your child, and then to find out they are not even being protected from the diseases that they promised the vaccines covered? Insanity.

When my oldest child was a baby, after telling the health visitor I didn’t vaccinate, she promptly exclaimed, “Oh well, she’s lucky as she has herd immunity from the vaccinated children to protect her!”

She then went on to say that not everyone had the luxury of my decision because if less than 95% of children were vaccinated, then it wouldn’t work anymore. I thought this was a silly concept because if vaccination truly worked, then any child who was vaccinated would be protected from disease, no matter how many ‘infectious’ unvaccinated kids there were, and if the 95% herd immunity figure was a genuine argument, it only points to one thing: the medical profession don’t really believe in the effectiveness of their own vaccines.

What Is The Herd Immunity Theory?

The herd immunity theory was originally coined in 1933 by a researcher called Hedrich. He had been studying measles patterns in the US between 1900-1931 (years before any vaccine was ever invented for measles) and he observed that epidemics of the illness only occurred when less than 68% of children had developed a natural immunity to it. This was based upon the principle that children build their own immunity after suffering with or being exposed to the disease. So the herd immunity theory was, in fact, about natural disease processes and nothing to do with vaccination. If 68% of the population were allowed to build their own natural defences, there would be no raging epidemic.

Later on, vaccinologists adopted the phrase and increased the figure from 68% to 95% with no scientific justification as to why, and then stated that there had to be 95% vaccine coverage to achieve immunity. Essentially, they took Hedrich’s study and manipulated it to promote their vaccination programmes.

Why Vaccine Induced Herd Immunity is Flawed

If vaccination really immunises, then your vaccinated child will be immunised and therefore protected against any disease an unvaccinated child gets. If he isn’t, his shots didn’t work.

We should also examine whether or not the vaccines actually do provide immunity and in which populations epidemics occurred. Was it the unvaccinated children spreading disease as they would have parents believe? Or were those epidemics already in previously vaccinated people?

To do this I have listed several epidemics that have occurred in the last 100 years or so, including Smallpox, which medics claim that vaccination eradicated.

There was a Smallpox epidemic in Pittsburgh, USA, in 1924. This epidemic was started by a mandatory vaccination campaign in which people were imprisoned if they refused the shot. A health club then started a suit against Dr. Voux, who had headed the vaccination drive, for bringing disease upon the people. Legal council for the health club stated: ‘There have been NO deaths from Smallpox in Pittsburgh during the previous nine years from 1915 to 1924, including the years when there was no vaccination or re-vaccination, at all – and hence, no vaccine immunity.’

They pointed out that the vaccine campaign had caused 22 deaths and 112 cases of vaccine-induced Smallpox. (You can read a detailed history of vaccination in Eleanor McBean’s book, Vaccination Condemned, Better Life Research, 1981).

In Germany between 1947-1974, there were ten outbreaks of Smallpox including 94 people who had been previously ‘immunised’, who then became ill with the disease. (The Vaccination Nonsense, 2004 lectures, Dr. Gerhard Buchwald).

Here are some more recent epidemics in vaccinated populations:

In March 2006, 245 cases of mumps were confirmed in Iowa, US, where the law requires vaccination for school entry. Eleven year-old Will Hean of Davenport was diagnosed with mumps, and his 21 year old sister Kate.Both children had gotten the measles, mumps and rubella vaccine, or MMR. “He had all the shots and everything. You don’t think you’re going to get the mumps after you’ve been inoculated,” said Will’s father, Wayne Hean. (2006, The Associated Press).

In 2002 an outbreak of Varicella (Chickenpox) occurred in a US daycare centre for fully vaccinated children. Varicella developed in 25 of 88 children (28.4 percent) between December 1, 2000, and January 11, 2001. A case occurred in a healthy child who had been vaccinated three years previously and who infected more than 50 percent of his classmates who had no history of varicella. The effectiveness of the vaccine was 44.0 percent against disease of any severity.Children who had been vaccinated three years or more before the outbreak were at greater risk for vaccine failure than those who had been vaccinated more recently.

Conclusions: In this outbreak, vaccination provided poor protection against varicella. Longer interval since vaccination was associated with an increased risk of vaccine failure. Breakthrough infections in vaccinated, healthy persons can be as infectious as varicella in unvaccinated persons. (Outbreak of Varicella at a Day-Care Centre despite Vaccination – 2002 Karin Galil, M.D., M.P.H., Brent Lee, M.D., M.P.H., Tara Strine, M.P.H., Claire Carraher, R.N., Andrew L. Baughman, Ph.D., M.P.H., Melinda Eaton, D.V.M., Jose Montero, M.D., and Jane Seward, M.B., B.S., M.P.H.).

And here’s some vaccine failures for measles:

Five cases of measles secondary vaccine failure with confirmed seroconversion after live measles vaccination. (Scandinavian Journal of Infectious Disease vol. 29, no. 2, 1997, pp.187-90): Two, five, seven and twelve years after vaccination with further attenuated live measles vaccine, three of five patients experienced modified measles infection, and the remaining two had typical measles. “This may be the first SVF case report that confirms the existence of completely waning immunity in recipients of the further attenuated live measles vaccines.”

And Whooping Cough:

Journal of Infectious Diseases, vol. 179, April 1999; 915-923. Temporal trends in the population structure of bordetella pertussis during 1949-1996 in a highly vaccinated population- “Despite the introduction of large-scale pertussis vaccination in 1953 and high vaccination coverage, pertussis is still an endemic disease in The Netherlands, with epidemic outbreaks occurring every 3-5 years.” One factor that might contribute to this is the ability of pertussis strains to adapt to vaccine-induced immunity, causing new strains of pertussis to re-emerge in this well-vaccinated population.

Just recently, Dr. Kari Simonsen, a pediatrician at the University of Nebraska Medical Center, USA, said one in five children who are vaccinated for whooping cough will still get the disease. She said efficacy of the vaccine was ‘comparatively low’, but said ’It’s the best vaccine we can build to date.’ Despite admitting this, she still believes that parents should get the vaccine for their children.

At St. Robert Bellarmine School in west Omaha, 12 children had confirmed whooping cough, of those, most had been vaccinated.

The Nebraska Department of Health and Human Services reported Thursday that the state has had 117 confirmed cases this year, up from 70 all of last year and 99 in 2006. There were 312 cases in Nebraska in 2005.

In Douglas County, 48 cases have been reported this year. Last year, 21 cases were reported.

This is in a country that gives five doses of the vaccine in the first four years of life and then another dose at 11 years of age!

Victor Plotkin – an epidemiologist from Lake County in the US has reported that there have been 82 cases of pertussis in the county so far this year.

‘Plotkin said the county did see very high numbers of cases during a nationwide outbreak of pertussis in 2004 and 2005. In 2004, there were 152 cases of pertussis and 135 cases in 2005. However, before that, pertussis cases in the county had averaged about 8 to 10 a year for many years.

Plotkin said the 2004 and 2005 pertussis outbreak appears that it may have been attributed to waning immunity among older children and adults who had not received booster shots. He said the most recent outbreak is a bit more puzzling because many of the children who are becoming ill are younger children who were recently vaccinated.

“Unfortunately, during this outbreak, even people that have been recently vaccinated are becoming sick anyway,” he said. “Their symptoms are milder, but they still can pass the bacteria along to others and make others sick.”

So What Happens if People don’t Vaccinate?

Are the unvaccinated really infectious?

According to Archives of Disease in Childhood, vol. 59, no. 2, February 1984, pp. 162-5): ‘Severity of whooping cough in England before and after the decline in pertussis immunisation’, “Since the decline of pertussis immunisation, hospital admission and death rates from whooping cough have fallen unexpectedly… The severity of attacks and the complication rates in children [who were] admitted to hospital were virtually unchanged’. – i.e. hospital admissions and death rates reduced when people WEREN’T getting vaccinated, meaning that avoiding shots is actually good for your child’s health and may save his life, and in those cases which were admitted to hospital, there were no increased complications in the unvaccinated group. Basically, at best the shots don’t make a difference and at worse, they kill or disable.

Another paper said that in the years 1977 to 1979 there was the largest outbreak of pertussis that they’d reported in 20 years, BUT:

1. The death rate was lower than in previous outbreaks
2. 35% of cases were in FULLY VACCINATED children
3. In the 1977 and 78 epidemics, 95% of UNvaccinated children ‘escaped infection’ or were not notified, which means that only 5% of unvaccinated children had confirmed pertussis.

“Estimates based upon notifications indicate that there was in the 1977-9 triennium in the United Kingdom the largest outbreak of whooping cough for 20 years or more….Deaths in which whooping cough was certified as the immediate of underlying cause were lower than in previous outbreaks….But, overall, about 35% of reported cases were children who had received three injections of triple vaccine. Acceptance of pertussis vaccine fell sharply in 1975 but about 95% of unvaccinated children in age groups 0-5, including the 1977 and the 1977 and 1978 birth cohorts, either escaped infection or were not notified.’

But there hasn’t been one double-blind controlled study of vaccinated vs. unvaccinated children since 1979 when one trial was carried out on BCG vaccine. Why? The medical profession say it is unethical to withhold vaccination from children. Therefore they cannot gain an accurate indication of what health is because everyone is getting the shots and suffering colds, ear infections, eczema, asthma and there is nothing to compare it with. If they did do a study, they would undoubtedly find the unvaccinated are healthier and maybe that it why they refuse.

Not one of my four daughters ever suffered from any of the common childhood ailments that so many of their friends did. Whilst all the babies in the nursery were catching colds every other week, my baby was happy and healthy. “She’s got an excellent immune system even though she’s never been vaccinated”, remarked the health visitor at her check. “No” I corrected, “She has an excellent immune system BECAUSE she’s never been vaccinated.”

Theory of Immune Memory Falls Apart as Stanford University Discovers that People are Immune to Pathogens they’ve Never Encountered

‘Although T cell memory is generally thought to require direct antigen exposure, we found an abundance of memory-phenotype cells (20%–90%, averaging over 50%) of CD4+ T cells specific to viral antigens in adults who had never been infected. These cells express the appropriate memory markers and genes, rapidly produce cytokines, and have clonally expanded. In contrast, the same T cell receptor (TCR) specificities in newborns are almost entirely naïve, which might explain the vulnerability of young children to infections. One mechanism for this phenomenon is TCR cross-reactivity to environmental antigens, and in support of this, we found extensive cross-recognition by HIV-1 and influenza-reactive T lymphocytes to other microbial peptides and expansion of one of these after influenza vaccination. Thus, the presence of these memory-phenotype T cells has significant implications for immunity to novel pathogens, child and adult health, and the influence of pathogen-rich versus hygienic environments.’

So, rather than pathogens being dangerous for you, they are actually good for you and help to develop your immune system!

Why the Social Responsibility Argument is Nonsense

The guilt trip method is a common vaccine marketing technique. If a parent is concerned, say about the ingredients in the shot for their child, they are told that they ‘have to’ vaccinate for the good of all other children to prevent the spread of disease in the community. This concept is flawed for a variety of reasons that I will explore here:

1. As stated above, diseases occur in 95% vaccinated communities and in outbreaks, the majority of those affected are already vaccinated. See pages http://www.vaccineriskawareness.com/Diseases-In-The-Vaccinated and http://www.vaccineriskawareness.com/Diseases-In-The-Vaccinated-Page-2 for regularly updated citations and articles about diseases in highly vaccinated populations.

2. Some vaccines are live and can shed in the child’s urine, excrement and saliva. Vaccine viruses can end up in our water supply by entering the sewage system and infect unvaccinated children, as reported in the ‘diseases in the vaccinated’ pages and http://www.vaccineriskawareness.com/Vaccine-Shedding. Killed virus vaccines have also been known to mutate and spread disease. For instance, a 16 year old girl died of meningitis B after kissing her boyfriend who’d just had the meningitis C vaccine. Scientists proved the bug was a mutated version of the vaccine virus – New England Journal of Medicine,Volume 342:219-220, January 20, 2000, number 3.

So in actual fact, the vaccinated are the ones who carry the disease and risk infecting the unvaccinated, rather than the other way around.

3. Doctors argue that people should be vaccinated to ‘protect’ those who are immuno-suppressed through cancer or some other cause. However, as vaccines mutate and shed, then an immuno-compromised person is at risk by being around a recently vaccinated person. For instance, the Merck Manual says ‘Immunocompromised patients should not receive live-virus vaccines, which could provoke severe or fatal infections.
Occasionally, within 1 mo of (chickenpox) vaccination, a mild maculopapular or varicella-like rash develops. Patients who develop this rash should avoid contact with immunocompromised people until it resolves. Spread of the virus from vaccine recipients to susceptible people has been documented in < 1% of recipients but only from those who developed a rash.

The same manual also states that 15% of children vaccinated with MMR will get a mild form of measles. They say it is noncommunicable but as it is live, the same as varicella vaccine, it could confer the same risk to the immuno-compromised. My eldest daughter actually got measles from a baby who’d just come straight from the MMR clinic. She broke out with classic measles rash and other symptoms 14 days later, which is the incubation period for measles.

No other child had it and there were no other cases in the area. I believe that my daughter, although she was hardly ever sick, was immuno-compromised to an extent because she was bottle fed due to me nearly dying from an infected episiotomy at her birth. I have had calls from nurses asking if it’s okay to vaccinate with live vaccines when there was a cancer ward next door and the patients were in direct contact. I said no. There are many documented cases of transmission to close contacts after live virus vaccine and the affect on an immuno-compromised person could be disasterous.

For instance, data for Flu Mist live flu vaccine spray states:

‘This medication should not be used if you have certain medical conditions. Before using this medicine, consult your doctor or pharmacist if you have: history of allergy to egg or egg products, immune deficiency.

After receiving the vaccine, you may shed influenza virus through the nose for up to 3 weeks. Tell laboratory personnel that you have used this medication. Nasal/oral specimens will test positive for influenza virus during this time. Also avoid close contact (e.g., same household) with people who are immunocompromised (e.g., HIV infection, cancer therapy) for at least 21 days. ‘

4. Vaccination is an invasive procedure on an otherwise healthy individual where no treatment is indicated. Vaccinations are not harmless sugar pills, they are drugs and like all drugs they have side-effects, sometimes serious. A person should never undergo any procedure involving risk for the benefit of someone else. Doctors argue that only ’1 in a million’ are seriously injured or killed by vaccination, but if your child is that one, the risk to your child is 100%.

5. The responsibility of a parent is towards her own child. That is why we have something called Parental Responsibility (PR) in law. If your child is one of the 1 in 1000 children who suffer a seizure after MMR (http://www.immunisation.nhs.uk/Vaccines/MMR/Having_the_vaccination/after_mmr) then you will have essentially caused a seizure in your child to protect another child.
My own personal OPINION as a mother myself is that each parent is responsible for their own child and that child’s health and I will not risk my child’s health for a highly debatable perceived benefit to somebody else. If anything happened to my child as a result, I would be failing in my law given PR to protect my child.

Doctors argue that I am putting my children at risk by not vaccinating – but as stated further up the page, the majority of epidemics are occuring in the vaccinated as reported in many medical journals and newspapers.

6. The cancer patient who lives next door to you is not going to come around and give 24 hour a day care to your DPT brain injured child. He does not take social responsibility for your child – so why should your child take responsibility for him? According to Longmount Clinic, whole cell DPT causes brain damage in 1 in every 140,000 children – ‘Convulsions occur in 1 of 1750 vaccinations. Pertussis vaccine has also been associated with acute encephalopathy with permanent brain damage. This is a truly SHOCKING figure. Although they argue that DTaP has now been developed that cuts the risk, but it only reduces MILD reactions, not serious ones. A data sheet for DTaP vaccine states:

‘Over the entire study period, 6 seizures were reported in the DAPTACEL™ group, 9 in the DT group and 3 in the whole-cell pertussis DTP group, for overall rates of 2.3, 3.5 and 1.4 per 1,000 vaccinees, respectively. One case of infantile spasms was reported in the DAPTACEL™ group.’ – so the seizures were actually more in the DTaP group than the whole cell group.

And:

‘The common local and systemic adverse experiences, after all 3 doses, for DAPTACEL™ and the participating acellular vaccines that have subsequently been licensed in the US were generally similar in type and frequency and were reduced in comparison to the whole-cell pertussis DTP vaccine.’

7. Even if vaccines did work at preventing disease, there is no compensation for those who choose to partake in the programme. The UK government does not offer compensation to children injured or killed who were under the age of 2, and this is when most of the vaccines are given – http://www.vaccineriskawareness.com/Vaccine-Damage-Payments-Unit

If the person was older than that at the time of injury or death, then you have a slim chance of getting compensated but even then, you have to prove you are 60% disabled or more and if you do, you will only get a maximum payout of £120,000 – which will not pay for the life time care of a severely injured person.

If we are going to have a system of medicine where it is okay to sacrifice some for the benefit of the majority, which is the argument of vaccination, then we need to stand up and acknowledge those sacrificed and properly honour and compensate the families of the dead in the same way we honour our war dead.

Until such a system is implimented, parents choosing to ‘protect others’ via vaccination have no protection themselves if something goes wrong.

Is it Ethical to Kill Children to Save Children?

Should the government promote a medical intervention that undeniably causes death and serious injury to a minority in order to save the lives of the majority?

Vaccines are credited with saving the lives of millions of people from many diseases, but they have also taken lives. In Vaccine Epidemic: How Corporate Greed, Biased Science, and Coercive Government Threaten Our Human Rights, Our Health, and Our Children, authors Louise Kuo Habakus and Mary Holland explain that the current vaccine program stakes the life of one child over another. No parents should be compelled to take actions that could cause their child to live a life of suffering, or even die.

Bill Gates recently stated on CNN that people who question the safety of vaccines are liars who are killing children: “So it’s an absolute lie that has killed thousands of kids… the people who go and engage in those anti-vaccine efforts — you know, they, they kill children.” In reality, it is the people who fail to question the safety of the current vaccine program who may be allowing innocent infants and children to suffer serious injuries, and even death. Could some of these injuries and deaths have been avoided?

Fried Pie, Done Right! (gluten free,soy free, nut-free, dairy free, corn-free egg free etc)



I was googling tofu recipes this morning(I have a piece of nofu needing to be cooked) and I stumbled across a post on The Kitchn blog.(unlike my pictures, her pic's are great! Take a look before you dive into this, it helps!)

She had simply cut rice paper wrappers into pie slice sized pieces(I cut 8 per wrapper) and then fried them in a bit of oil. If you have ever had fried rice noodles at home you know when the oil hits the right temperature and you plop the bundle of rice noodles in, they puff up and turn white so fast! That is exactly what the rice paper wrappers did-

Of course, the savory aspects caught my interest, but you know I am always thinking dessert.


So, I fried each piece and sprinkled a spice/sugar on them.(we don't use cinnamon so I added allspice,cloves and ginger into some granulated sugar)- they are AMAZING! They are FAST!



To take it to the next level we spooned some fresh diced peach on one, and a few thawed cherries on the other. I topped it with a spoonful of coconut yogurt(or you could heat the fruit and drop some ice cream on it, or whipped cream or sweetened coconut sour cream?) Sprinkled with a touch of corn-free powdered sugar-


Fastest,easiest fried pie EVER!


Honestly, the sugared fried pieces reminded us of churro's or elephant ears but so light and crisp they melt away on your tongue.. these could be a very dangerous snack as far as empty calories go! We figured the fruit added at least a touch of nutrition!




Rice paper wrappers(we have a few different ones, we have just rice, rice and tapioca and some spicy ones, I used just the rice wrapper though all the others should work as well.)


Grapeseed oil

granulated sugar(and spice of your choice)

Fruit,berries, toppings..

These are best served fresh, don't add fruit until you are ready to eat.
